About the Bluefin Tuna

At Tahk Omakase Sushi, our bluefin tuna is more than an ingredient — it's the centerpiece of everything we do. Sourced directly from Tokyo's legendary fish market, each fish is selected by hand, inspected for marbling, texture, and depth of flavor, and flown to our kitchen within days of catch.


This isn't tuna you'll find on a typical sushi menu. It's a rare, prized cut — the kind reserved for Japan's most discerning chefs and diners.

Three Cuts, Three Experiences

Akami (Lean)

The classic cut — deep red, clean, and firm, with a pure, unmistakable tuna flavor that anchors the entire experience.


Chutoro (Medium Fatty)

A perfect balance of lean and fatty, chutoro melts with just enough richness to coat the palate without overwhelming it.


Otoro (Fatty Belly)

The most coveted cut of all. Buttery, delicate, and almost sweet, otoro is often reserved in limited quantities each night — ask your chef if it's available.

Our chefs prepare each piece of bluefin with precision — sliced against the grain, seasoned lightly, and served the moment it's ready, never before. Whether as nigiri, sashimi, or part of our full omakase tasting, every bite is designed to showcase the fish exactly as nature intended.
